Last weekend upon the invitation of our dear friends Pat and George Williams, my husband and I stayed at their beautiful home in the South Tahoe area. As many of you know, these last couple of months have been challenging, so we were looking forward to some rest and relaxation. The second night we were there, Pat made a delicious dinner of roasted root vegetables, and barbequed tri tip. The conversation was great! Good wine. Good friends.
The next morning as we ventured out for a hike with our Chocolate Lab Jake, I left my cookbook (I love reading cookbooks) Super Natural Every Day on the kitchen counter. Pat picked it up while we were out, and was inspired to make the frittata recipe with left over roasted veggies from the night before. She had never made a frittata using the author, Heidi Swanson’s, technique.
The pictures tell all. It was yummy! Especially the added touch of goat cheese. We would not recommend using the cast iron skillet, though. It needed quite a soaking.
For less than the price of a meal out, you can purchase a cookbook that inspires many meals and is much more healthy. I also like eating in so that you can lounge around and enjoy your loved ones and not feel so rushed.
