Vodka Sauce from the Barefoot Contessa Foolproof Cookbook

I finally had some time to wind down after weeks of being away at market. It was a beautiful sunny Sunday afternoon, but chilly enough that I was craving comfort food. I have been looking forward to reading the new Barefoot Countessa cookbook, Foolproof, so I thought today would be the perfect day to try one of her recipes. I was in the mood for pasta and since I didn’t want to go to the store on this cozy afternoon, Penne alla vecchia bettola (pasta with vodka) was the perfect recipe. I had all of the ingredients including the 2 cans of Italian plum tomatoes which I just happened to pick up on my last trip to Trader Joes. My husband, Tom, said not to use the good vodka. However, I cannot tell you how many times I have heard chefs on cooking shows explain that it is best to use the same quality of alcohol  for cooking that you would drink. It was super easy to sauté the onions then put everything in the pot and bake in the oven for 1 ½ hours. While it was in the oven, we took advantage of the low tide, taking Duke for a walk. As we were coming back home, the fragrant smell of the sauce greeted us from down the street.

I cannot wait to try more recipies from this book. Everything looks delicious and easy. And I know I can count on all of Ina’s recipes to be a great success!
